Ingredients

  • 2 Tbsp olive oil
  • 1 small red onion, sliced thinly
  • 2 cloves garlic, crushed
  • 1 bulb fennel or courgette, sliced thinly
  • 12 cherry tomatoes, sliced in half
  • 2 Tbsp fresh parsley, chopped

Method

In a frying pan, add the olive oil. Sauté the onion, garlic and fennel slices until just starting to wilt. Add the tomatoes and heat until slightly softened. Toss through chopped parsley.
