Lamb Steaks with a Spicy Rub

Ingredients

  • 1 pack of Silver Fern Farms Lamb Steaks
  • 1 Tbsp olive oil
  • 2 potatoes, peeled and diced into 0.5 inch cubes
  • 1 tsp ground turmeric
  • Sea salt and ground pepper to season

Spicy Rub

  • ½ tsp ground ginger
  • ½ tsp ground coriander
  • ½ tsp cumin
  • Sea salt and freshly ground black pepper
  • 1 Tbsp olive oil

Method

Heat a tablespoon of oil in a pan. Add cubed potatoes, turmeric, salt, and pepper. Sauté gently for 15-20 minutes, tossing the potatoes regularly so they brown evenly. Set aside in a warm place.

Combine the spicy rub ingredients and massage into the lamb steaks. In a hot pan, cook the lamb 4 minutes each side (medium-rare). Put on a plate, cover with tin foil and leave to rest for 5 minutes.

Slice the steaks across the grain. We suggest serving with a tomato & fennel salad.
