Cajun Lamb Loin Fillets on Ciabatta

Ingredients

  • 1 pack of Silver Fern Farms Lamb Steaks
  • 4 Tbsp cajun spice mix
  • Olive oil
  • Ciabatta bread
  • Basil pesto
  • Lettuce leaves
  • Slices of red bell pepper and cucumber
  • Mayonnaise

Method

Coat lamb with Cajun spice mix, cover and leave to rest for 30 minutes. Heat a frying pan until hot. Drizzle a little olive oil over the lamb and sear each side until browned. Transfer seared lamb to a preheated oven (390°F) and bake for 5-6 minutes. Remove your lamb from the oven and allow it to rest for another 5-6 minutes before slicing thinly.

Thickly slice the ciabatta. Spread with some basil pesto and layer with lettuce leaves, bell pepper, and cucumber. Gently layer the thinly sliced lamb over the vegetables and top with a Tbsp of mayonnaise.
