Ingredients

  • 1 pack Silver Fern Farms Beef Rib-Eye Steak
  • 2 Tbsp olive oil
  • 2 cups rocket leaves (fine wild rocket variety)
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 3.5oz parmesan, shaved

Method

Rub the beef rib-eye steaks in oil and season to taste. Pan fry the meat for 2½-3 minutes each side (medium-rare). Transfer to a plate, cover, and rest for 5 minutes.

Toss the rocket leaves in the remaining olive oil and the vinegar. Place on a long platter. Slice the steaks and sit on top of the rocket. Scatter the parmesan over and serve immediately.
