Ingredients

  • 1 pack Silver Fern Farms Premium Ground Lamb
  • 3 Tbsp olive oil
  • 8oz halloumi, sliced width-ways
  • 1 avocado, stone removed, smashed with a little salt and lemon juice
  • 2 Tbsp cilantro
  • 4 large lettuce leaves
  • 4 Kaiser bread burger rolls – we used burger buns for testing
  • 4 Tbsp  garlic aioli
  • 1 tsp lemon zest
  • Crumbled pistachios

Method

Bloom the meat
Remove Silver Fern Farms Premium Ground Lamb from the packaging. And 1 teaspoon of salt to the meat and shape into 4 burgers.

Cook the meat
Heat a frying pan or BBQ plate to medium heat and add 1 tablespoon oil. Cook the lamb burgers for 3 minutes on one side then turn and cook a further 4 minutes. Remove meat from pan and leave to rest covered in foil for 3 minutes.

Cook the cheese
Heat a frying pan to moderate heat with 1 tablespoon of olive oil. Slice the halloumi cheese width-ways into four. Pan-fry the halloumi for 1 minute on each side. In a separate bowl, combine garlic aioli with lemon zest. Mash avocado with a little salt and lemon juice and add fresh chopped cilantro. 

Toast the bun
Whip the pan out and return to the heat. Toast the bun, cut side down until golden. Remove from heat.

Assemble the burger
Start with the bottom bun, add garlic aioli, lettuce, Lamb burger, smashed avocado, halloumi cheese and pistachios.
