Beef Flat-Iron Steaks
Named for its unique shape, this versatile steak has been skilfully prepared from the shoulder and promises unexpected tenderness, flavor and natural marbling.
Remove Silver Fern Farms Beef Flat-Iron Steaks from packaging and rub with oil. Season with sea salt flakes and freshly ground black pepper. Allow the meat to rest at room temperature for 10 minutes.
To make tomato dressing, cut a cross on one end of each tomato. Blanch in boiling water for 20 seconds, then refresh in icy water. Peel, cool and remove core and seeds. Dice flesh finely and mix with paprika. Mix with remaining ingredients.
Heat a skillet, frying pan or grill plate over a medium to high heat. Grill the Silver Fern Farms Beef Flat-Iron Steaks for 2 minutes one side. Turn and grill for a further 2 minutes, for medium-rare. Leave to rest, covered, for 5 minutes.
Thinly slice steaks across the grain. Serve topped with tomato dressing.
