Lamb Stir-fry with Coriander and Lime

  • 1 pack of Silver Fern Farms Lamb Stir-Fry 
  • 2 limes (zest from 1, juice from 2) 
  • 1 red chilli, deseeded and finely chopped 
  • 4 tsp brown sugar 
  • ½ Tbsp fish sauce 
  • 1 Tbsp tamari or light soy sauce 
  • 4 cups stir-fry vegetables 
  • ½ cup plain, peanuts roasted (optional)
  • 1 bunch fresh coriander leaves 
  • ½ cup fresh mint leaves


Mix together the lime zest and juice, chilli, sugar, fish sauce, and tamari. Marinate the lamb in this mixture for 15 minutes.

Remove the lamb from the mixture and reserve marinate. Heat a frying pan or wok and cook the lamb in two batches for 2-3 minutes each; remove and set aside to rest.

In a separate pan, stir-fry the vegetables for 5-6 minutes. Return the lamb to the pan with the marinate toss to combine.

Garnish with coriander, mint leaves and peanuts. Serve with noodles or rice.
