  • 300g packet Silver Fern Farms Beef Medallions
  • 2 tbsp extra virgin olive oil
  • 3 tsp green peppercorns
  • ½ tsp fine salt
  • 3 tsp sumac
  • 400g canned chickpeas, drained
  • 2 tbsp tahini
  • Juice of 1 lemon
  • 2 tsp crushed garlic


Remove Silver Fern Farms Beef Medallions from packaging and rub with 1 tablespoon of the olive oil. In a mortar, roughly crush peppercorns, salt and 2 teaspoons of the sumac. Rub pepper mixture over the meat, covering all sides. Allow meat to rest at room temperature for 10 minutes.

Meanwhile, place chickpeas, tahini, lemon juice, garlic, remaining sumac, sea salt flakes and freshly ground black pepper in a blender. Pulse until smooth.

Heat remaining oil in a skillet, frying pan or barbecue plate over a medium to high heat. Grill the Silver Fern Farms Beef Medallions for 2 minutes on one side. Turn and grill for a further 3 minutes, for medium-rare. Leave to rest, covered, for 5 minutes.

For a shared dish, spread some of the hummus across a platter. Slice medallions across the grain and arrange on hummus.
