How To Cook
Sear for a crust. Rub with oil and season. Sear on all sides in a pan at a medium heat for enhanced flavour and texture.
Pick your method.
Our method of choice: add your meat to foil with a small amount of liquid (as per chosen recipe) plus extra oil, and wrap tightly. Alternatively: add your meat to an oven dish or slow cooker and cover with liquid.
Simmer for tenderness.
Cover and cook low and slow until tender. *If in oven, check halfway through cooking time and add more liquid if required.
Savour, share and enjoy.
Spoon cooking juices over meat and/or reduce in a pan.
Serve with an accompanying sauce of your choice
